Amish Pumpkin Pie Squares

Ingredients and Preparation Instructions:

Crust:

1 1/4 c. flour
1/2 c. quick oats
1/2 c. brown sugar
1/2 c. butter

Mix ingredients to form crumbs. Press into a 9 x 13 pan and bake at 350° for 10 minutes.

Filling:

1 1/2 c. pumpkin
1 can evaporated milk
2 eggs beaten
3/4 c. sugar
1/2 tsp. salt
2 tsp. pumpkin pie spice

Mix and pour over hot crust. Bake 20 minutes more.

Topping:

1/2 c. flour
1/2 c. pecans
1/2 c. brown sugar
2 Tbsp. butter

Sprinkle over pumpkin filling and bake for 10-15 minutes or until set.
